I simply love this ones, they are healthy and make for a great tasty filling dinner!. A nice twist is to use parmesan cheese and parsley/basil to spice them up. :D

  • 4 Good Sized Portobello Mushrooms (8 to 10 cm)
  • 1 Red Bell Pepper
  • 1 Chopped Shallot
  • 2 Garlic Cloves Chopped
  • 2 tbsp Balsamic Vinegar
  • 1 tsp Lemon juice
  • 1 tbsp Olive Oil
  • Salt & Pepper
  • 1 tbsp Basil
  • 4 Hamburger Buns
  • 2 Tomatoes
  • 4 Iceberg Leaves
  • 4 Slices of Emmenthal or Provolone

  1. If using uncooked bread place in the oven following the instructions on the packet;
  2. Clean the mushrooms using a damp paper towel to rub them gently. If they are very dirty gently peel away the skin;
  3. To make the marinade mix some chopped garlic, chopped shallot, diced red pepper, balsamic vinegar, shredded fresh basil leaves and fresh lemon juice in a bowl and combine well;
  4. Spoon the marinade over the bottom side of the mushrooms before drizzling olive oil over the mushrooms. Set them aside at room temperature and allow marinade for 20 minutes;
  5. Heat a chargrill pan to a medium temperature and using a pastry brush paint the bottom of the pan with some olive oil;
  6. Place the mushrooms skin side down in the pan and gently cook them from 4 minutes without touching them at all;
  7. After 4 minutes, cover the mushrooms with a sheet of tin foil and turn the temperature down to the lowest possible temperature and cook for a further 4 minutes;
  8. Remove the pan from the heat and add a slice of cheese to the top of the mushrooms and cover again with tin foil and set aside and allow to melt;
  9. Remove the buns from the oven and slice in half;
  10. Add the accompaniments of your choice (sliced tomato, lettuce, pickles etc) and place the mushrooms into the buns and serve immediately.
