  • Leitrim Boxty:
  • 125g Odlums Cream Plain Flour
  • 1 Teaspoon Baking Powder
  • 125g Grated raw Potato
  • 125g Cold Mashed Potato
  • Good pinch Salt
  • A few Tablespoons of Milk
  • 1 Egg (beaten)
  • Oil & Butter for frying
  • Donegal Boxty:
  • 125g Odlums Cream Plain Flour
  • 125g Grated Potato
  • Good pinch Salt
  • 1 Egg (beaten)
  • Oil & butter for frying

  1. Leitrim Boxty:
  2. Place the raw potato into a clean teatowel or kitchen paper, squeeze out all the excess liquid (starch).
  3. Place in mixing bowl. Add the remaining ingredients and mix well.
  4. Heat a little oil and butter in a pan and drop spoonfuls of the mixture on hot pan and fry until golden brown on each side.
  5. Serve hot.
